Solianka is a Russian stew that has
some rather unconventional ingredients in it - please don't let that scare you!
Russian cooking tends to use vegetables American cooking doesn't; in this case,
cucumbers. Cucumbers don't belong on just a salad! They not only absorb all the
flavors of other ingredients, they lend a texture to the stew that's
unmistakable. All the ingredients in this recipe help develop a flavor
incredibly rich and complex. Make sure to serve it with plenty of crusty bread
to sop up juices.
I have prepared this dish many times to
compliment a deliciously chilly autumn day, for both family and friends.
